Zucchini flan
Zucchini are a tasty, versatile vegetable and there are so many ways to enjoy them. You can roast them, stuff them, wok them, make soup out of them, and much more. If you put a zucchini plant in your garden or even in a pot on your patio, you'll have tasty vegetables all summer long. My zucchini plants in the vegetable garden are thriving, and I'm always on the lookout for new dishes. Today, I'm trying out a new recipe that uses zucchini to make flan.
Flan of zucchini is a delicious, easy-to-make dish that you can prepare in advance. You can serve the flan as an appetizer, or pair it with a fresh salad as a starter. Bake a piece of salmon and you've got a great main course. Are you a vegetarian? Serve the flan with a tomato salad and Portuguese-style carrots on the side.
If you can, try to find zucchini that aren't too big. The larger ones can be a bit mealy inside and have lots of small seeds. In this recipe, I use milk and cream, but you can use plant-based alternatives if you like.
Recipe: Flan of zucchini
With this recipe you will make delicious flan of zucchini for 2 to 4 people. The size of my baking dish is 16x20 cm for a flan 2.5cm high.
Ingredients:
- 2 zucchinis (green and/or yellow)
- 1 clove of garlic
- 1 tablespoon olive oil
- 2 tablespoons chopped chives
- 1 tablespoon chopped tarragon
- 100 ml heavy cream
- 100 ml milk
- 2 eggs
- 75 g Gruyere cheese
- 1 pinch cayenne pepper
- ¼ teaspoon salt
- ¼ teaspoon ground pepper

Step 1: Prepare the zucchini
Preheat your oven to 185°C with hot air (or 200°C without hot air). Fill a large baking dish with about 2cm of water and put it in the oven. This is the hot water bath for the flan.
First, cut the zucchini into small 1 cm cubes and finely chop the garlic. Heat the olive oil in a non-stick pan and sauté the garlic and zucchini until they're soft but not browned. Once the zucchini is sautéed, let it cool.

Step 2: Prepare the flan
Now, beat the eggs in a mixing bowl and mix in the rest of the ingredients. Line a fireproof dish with baking paper. Next, spread the fried zucchini in an even layer at the bottom of the dish, then top with the egg mixture.

Step 3: Bake the flan
Finally, put the flan in the hot water bath and bake it for 35 minutes. You'll know the flan is ready when you insert a fine knife, and it comes out clean.
You can enjoy the zucchini flan hot or cold.
