Island fries of common and sweet potato
During our stay in the Marquesas Islands, I ordered one evening rum-flambéed giant shrimp with vanilla sauce and island fries. I had no idea what to expect, but my curiosity was piqued....
Island Fries
The waitress placed a basket of finely-cut French fries, made of regular and sweet potato, sprinkled with salt and vanilla powder, before me on the table. A heavenly combo! Sweet potato with vanilla goes very well with both fish and meat dishes. You can prepare the sweet potato as fries or cut it into slices and braise them in olive oil. To finish off, sprinkle the island fries with unsweetened vanilla powder and salt.

- 2 potatoes, for fries
- Maldon salt flakes
- Unsweetened vanilla powder

How to make easy island fries
Recipe
Peel the potatoes and cut them into fine fries, no more than ½ cm wide. Deep-fry the 2 types of potatoes separately in oil at 160°C. The fries should be just cooked, without coloring them. Meanwhile, heat a hot air oven to 180°C.
Now heat the frying oil to 180°C and deep-fry the fries again in small portions. They should be crispy. When the fries are ready, they begin to sing. Make sure the sweet potatoes keep their orange color.
Drain them on paper towel and place them on an oven tray. Sprinkle the fries with salt and keep warm in the oven until all the potatoes are fried.
Finally, sprinkle a little vanilla powder on top and serve the fries warm.
