Pure Polynesia: grilled swordfish with tropical flavors
My husband Didier and I concluded 2022 with a wonderful trip to French Polynesia. The island's gastronomy is known for its tropical flavors and fresh fish. I returned home with a suitcase full of new recipes to test in my kitchen and that I will share with you. One of them is roasted swordfish with tropical flavors.
This typical Polynesian-style dish uses lots of local fresh fruit, available in abundance on the islands. This summer meal is easy to prepare at home. It transports you to sun-kissed, exotic beaches where warm trade winds blow through your hair....
Ingredients for 2 people
- 300 g swordfish
- 1 tablespoon olive oil
- 100 g pineapple
- 75 g mango
- 2 passion fruits
- 1 cm ginger
- ½ red onion
- 8 cherry tomatoes
- ½ chili pepper
- Juice of 1 lime
- 4 sprigs cilantro
- 2 sprigs mint
- Pepper and salt
- 2 tablespoons mango coulis (you can find it ready-made in the frozen food section)

Step 1: prepare the brunoise of tropical fruits
Cut the pineapple and mango into small dice, remove the inside from the passion fruit and finely chop the ginger, onion and chili pepper. Then cut the tomatoes into 4. Finely chop the cilantro and mint, but keep a few leaves aside for finishing. Mix everything in a large mixing bowl and season with salt and pepper. Finally, add in the lime juice and olive oil.

Step 2: The swordfish
Rub the fish with oil, season with salt and pepper and grill. Make sure the fish remains juicy.

Step 3: Presentation
Arrange the fish with the brunoise on a plate. Top with cilantro and mint leaves and serve with the mango coulis. On the side, you can also serve steamed rice or salted plantain chips fried in coconut oil.
