Making your own ice cream with cinnamon
When you combine cinnamon ice cream with pastel de nata, you get a delicious well-balanced dessert. The only problem? Cinnamon ice cream is not readily available. That's why I'm happy to teach you how to make your own!
During my education at Spermalie chef school, we often made ice cream. The recipe below is still the one we used then; I only added cinnamon. I use an ice cream maker but you can also work manually.
Ingredients for 1 liter of ice cream
- 8 egg yolks
- 250 g sugar
- 1 liter milk
- 1 cinnamon stick
- 1 teaspoon cinnamon powder

Preparing the ice cream base
Bring the milk with the cinnamon to a boil. Set aside and let the cinnamon steep for a while.
Next, beat the sugar with the cinnamon powder and egg yolks until light and creamy.
Remove the cinnamon stick from the milk and pour the milk onto the creamy egg yolks. Stir well and let the mixture warm to 80°C over medium heat. Make sure it does not boil, or you will end up with an omelet.

Making ice cream with machine
Let the base cool down to 10°C. In the meantime, turn on the ice cream maker.

Making ice cream without an ice cream maker
Don't have an ice cream maker? Then you can still make ice cream!
Pour the cinnamon cream into a wide container and place it in the freezer. Stir the mixture every half hour so that no ice crystals form. Repeat this step until you have a fairly solid mass. Finally, leave the ice cream untouched in the freezer for several hours.
