Making your own hazelnut ice cream
Hazelnuts from Piedmont, a region in northern Italy, are known worldwide. They are among the best in the world. They are roasted, pounded or ground into flour. You'll find them incorporated into all kinds of dishes. Turn them into gelato di nocciola and you have an irresistible dessert.
Making your own ice cream is very easy and really pays off. It's best to use an ice cream maker for this. Don't have one? With a little patience, you can still enjoy a delicious gelato
Recipe for hazelnut ice cream
Ingredients for half a liter of ice cream:
- 500 ml whole milk
- 60 g roasted hazelnuts
- 125 g sugar
- 5 egg yolks
- 50 ml condensed milk

Preparing the base
First, bring the milk to a boil. Set it aside while you grind the hazelnuts very finely. You obtain almost a paste.
Next, beat the sugar and egg yolks until light and creamy.
Pour the milk onto the creamy egg yolks and stir well. Now add the ground hazelnuts and condensed milk as well.
Heat the mixture to 80°C over medium heat while continuing to stir well. Make sure it does not boil, or you will end up with an omelet.
Your base is now ready.

Making ice cream with the ice cream maker
Let the base cool to no more than 10°C and turn on the ice cream maker. Turn the ice cream according to the manufacturer’s instructions.

Making ice cream without an ice cream maker
Pour the cooled base into a wide container. Put in the freezer. Every half hour stir the mixture until you have a fairly solid mass. Make sure you don't get any ice crystals. Now leave untouched in the freezer for several hours.
